Vegan Guacamole, Broccoli and Alfalfa Sprouts Wrap

Buying lunch is one of the biggest money draining activities there is. Take 10 minutes the  night before (or morning of, if you’re one of those crazy morning people) and save yourself the money. It’s also way more customizable for portions and taste, not to mention it’s nutritional benefits.

This wrap is packed to the brim—I literally tore the first wrap it was so full—with green, raw, vegan goodness. Guacamole, broccoli, sprouts, chives, celery, spinach, lettuce and green chili sauce. Simple as that. The only thing I threw on top at the end which isn’t green is tahini, but that added a good flavour kick and protein so I can’t complain.All Green Vegan Raw WrapRaw Green Vegan Wrap

Ingredients

Makes 1 big wrap

  • 1 large tortilla wrap
  • 1 avocado, pitted and diced
  • 2-3 green onions, chopped
  • 2 stalks celery, finely chopped
  • 1/2 lime, juiced
  • Salt and pepper to taste
  • 1 tbsp. fresh cilantro, chopped
  • 1 tbsp. fresh chives, chopped
  • 1/2 cup broccoli, chopped
  • 1/4 cup alfalfa sprouts
  • 1/4 cup fresh spinach leaves
  • 1/4 cup lettuce, chopped
  • 2-3 drops green chili sauce
  • 1 tbsp. tahini

Method

In a small bowl, lazily mash the avocado with the green onion; there should still be chunks. Add celery, lime juice, salt and pepper and stir until well mixed. Add in cilantro and chives. Set aside.

Place tortilla on a flat surface. Layer the guacamole followed by the remaining ingredients in the middle of the wrap, leaving space around the edges for folding. Roll the end closest to you upwards, then fold each the right and left sides in towards the middle. This should leave one end open, and one end closed so nothing falls out and it’s easy to hold.Open Green Wrap

Serve immediately or pack for lunch the next day and enjoy!

    1. I’m dumbfounded at how much some fast food places can get away with charging over $10 for the most garbage combos. I don’t buy very often but I definitely cave into tea all the time..
