If you’re like me, sometimes eating is the last thing I want to do in the morning. When you have to be out the door in a rush or if you’re just hungover, eggs and toast isn’t exactly ideal. That’s why smoothies are the greatest breakfast ever.
Kiwi, blueberry, strawberry, orange and peanut butter. Simple, but it does the trick. It’s got a thick consistency without using milk because of the peanut butter, which also adds some protein and flavour. In the ingredients I’ll specify to use fresh or frozen fruit, but it’s generally up to what you have in your kitchen or what you prefer. Using frozen fruit can thicken up a smoothie as well, but I mostly prefer fresh so I only used frozen blueberries.
This recipe makes two small smoothies (about 3/4 glass) or one big smoothie, but you can multiply the ingredients as needed.
- 2 ripe kiwis, peeled and quartered
- 5 fresh strawberries, with tops removed
- 1/2 cup frozen blueberries
- 1 cup orange juice
- 3 tbsp. peanut butter
Method
Combine kiwis, strawberries, blueberries and orange juice in a blender on high speed for 1 minute until smooth. Add in peanut butter and blend for another 30 seconds.
This looks so delicious, I want to make one. Have to go grocery shopping first!
