Rainy days make for soup binges.
They also make for laziness, which is good because this recipe takes under 30 minutes, uses pretty basic ingredients and has tons of flavour and texture.
It’s also really healthy, so throw that concept of junky comfort food out the window. This is all you’ll need when it’s looking glum outside.
Ingredients
- 3 tbsp. vegetable oil
- 1 onion, chopped
- 2-3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 small sweet potato, peeled and cubed
- 1/3 cup rice
- 3 cups vegetable stock
- 1 tbsp. white vinegar
- 1/2 cup green beans, chopped
- Salt and pepper to taste
Method
In a medium-sized saucepan, heat vegetable oil. Add in onion, garlic and red pepper; saute until veggies begin to look tender and are slightly browning.
Add in sweet potato, rice and vegetable broth. Stir everything around until well mixed, cover and bring to a boil. Once boiling, reduce heat and let it simmer for 15 minutes. The sweet potato should be easily pierced with a fork, and the rice should be well cooked.
Add white vinegar and green beans. Let cook for another 3 minutes uncovered, then turn off heat. With an electric hand mixer or regular blender, take 1 cup of the soup and blend until smooth. Add the blended soup back in with the rest of the soup, season with salt and pepper, and you’re done!
If you notice the soup thickening after you let it sit for a while, you can add more vegetable stock. Enjoy!
