Chocolate Chip Banana Muffins

Well, so far I have posts for dessert, dinner and appetizers but no breakfast. So here it is!

I’m not really one to cook big breakfasts in the morning unless I have lots of time, so it’s either a bagel or nothing. These muffins have been quite the life saver for many years in the morning because they’re filling, healthy and can keep for a good amount of time before going bad. I also made them in muffin-ball form which you can see at the bottom of this post if you’d prefer a bite-sized version!

What You Need:

  • 1/2 cup (or 1 stick) of butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 2 large ripe bananas, mashed
  • 2 cups flour (all purpose or whole wheat)
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 cup buttermilk (if you don’t have this on hand you can just mix 1 tbsp. of white vinegar with the rest of milk)
  • 1/2 cup chopped walnuts
  • 1 tsp. vanilla extract
  • 1/2 cup chocolate chips
  • cinnamon for topping

Preheat oven to 400 degrees.

Beat together butter & sugar at high speed with an electric mixer (or by hand, just takes a little longer). Once they are light and fluffy, add in the eggs one at a time. Add in bananas and beat until smooth.

In a seperate bowl, sift together flour, salt, baking soda and baking powder. Alternate stirring in the dry mixture and buttermilk into the egg mixture until the consistency is smooth.

Stir in nuts, chocolate chips and vanilla extract.

Grease 12 standard size muffin tins, and spoon batter in with a measuring cup about 2/3 full. Bake for 15-18 minutes, or until lightly golden and cooked all the way through.

For those of you who are less inclined to eat a whole muffin at once, or just want a snack to bring with lunch, you can use the exact same batter mixture but instead of using muffin tins you bake them in a cake-pop machine.

These are handy little machine for projects like this, but since it’s not an everyday sort of product they also sell round muffin tins that can be used for muffin or cake balls.

I guarentee you’ll get an energy boost in the morning from these so you can go about your day without having to bite anyone’s head off…serious problem in the morning.
